Fix It Forward Meal Plans

For this plan to work, I have made certain assumptions. I’ve assumed you know the cooking basics. If you have never cooked, this may not work. I’d suggest learning though!

I have worked diligently to assure that there are no more than three steps per night. Because steps are split up throughout the month, many of them are already done. I have condensed the recipe’s steps into three, so I have not included the actual recipe to simplify the process.

The order keeps a nice variation of meats and ethnic dishes. Be cautious about changing the order because I have the meals planned to keep ingredients from spoiling. These plans are for two people. Double the amounts for each additional two.

Winter Months:
Night 1 (Simplest Chicken Meal): El Pollo Loco Burritos

Cut off and freeze chunks of chicken (about 1 cup) from rotisserie chickens in a Ziploc baggie.

Assemble Burritos: chicken, pinto beans, pico de gallo, shredded cheese.

Freeze Chicken Bones in a large Crock Pot baggie.

Put together basics for chicken gravy using the rotisserie chicken package “goo” and freeze.
Night 2 (Simplest ground beef meal): Ground Beef and Potatoes

Cook 6 pounds of ground chuck with onions, green peppers, salt and pepper

Add frozen potatoes to one pound of the ground beef mixture and fry until done.

Freeze four remaining pounds of ground beef.
Night 3: (Simplest Pork meal): Pork Chops and Rice

Fry all Pork Chops with salt and pepper on Medium Heat.

Make rice. Use butter, salt and pepper.
-
When cooled, cube cooked pork and freeze in a Ziploc baggie. Reserve Pork Chop bones in another container in fridge.
Night 4: (Simplest Roast Beef Meal): Pot Roast

Refrigerate Potatoes and Carrots separately.

Pull apart beef for burritos later.

Reserve Liquid for Stock in the baggie and put in another container in the fridge.
Night 5: BLT’s on Croissants
-
Fry all the bacon.
-
Put stock back in crock pot with pork chop bones to make for later.
-
Crumble and Freeze leftover bacon in two sections.
Night 6: Beef Stroganoff and Carrots
-
Use some reserved Beef Stock
-
Make two packages of egg noodles. Freeze two cups.

Chop and freeze parsley
Night 7: Chipotle Tacos and Rice

Chop and store Cilantro, leaving out what’s needed for rice.

Cook all rice. Freeze in one-meal portions.
Night 8: Cajun Dirty Rice (with sausage)

Cook sausage and then set aside one pound.

Add celery and ground beef mixture.
Night 9: Chicken Dish using rotisserie chicken chunks, rotisserie gravy and Mashed Potatoes from Pot Roast

When beans are soft, but before you mash them, set aside half for chili.

Make Refried Beans in Crock Pot. Refrigerate them that night. Freeze one portion.

Reserve leftover Chicken and Gravy for Chicken a la King and pot pie and freeze.
Night 10: Cream of Carrot Soup

This is just add, heat and stir.

Toast some bread in the oven.
Night 11: Green Chili
-
This is just add to crock pot and heat during the day.

Freeze leftover green chili for next month.
Night 12: Grilled Cheese Sandwiches and Cream of Chicken Soup

Cook grilled cheese sandwiches, using the entire loaf of bread and sliced cheese to make eight sandwiches.

Freeze the sandwiches for later.

Add cream to the chicken soup.
Night 13: Omelets in a Baggie
-
Using sausage and bacon, make omelets.
-
Make a plain one to save for fried rice.
Night 14: Smothered Burritos Supreme with Chipotle Rice
Night 15: Best Ever Chicken Soup and Grilled Cheese Sandwiches

Cook the rotisserie chicken bones in the crock pot with onion and herbs.
-
Reserve some broth and freeze it before adding soup ingredients.

Add cooked egg noodles from your stash in the fridge at the very end and pull out the grilled cheese from the freezer. Reheat it in the oven.
Night 16: Spaghetti

Use some reserved Beef Stock and some of the parsley
-
Cook 3 packages of noodles (16 oz. each)

Freeze leftover sections in two parts.
Night 17: Pot Roast Patty Melts

Mix together the following spices for tomorrow’s chili:
Night 18: World Famous Chili

Use some reserved Beef Stock, a bag of ground beef, beans, canned tomatoes and the chili seasoning you stirred together last night.

Freeze leftover chili for next month
Night 19: Potato Pancakes
Night 20: Double Mushroom Lasagna
Night 21: Pizza

Use spaghetti sauce for pizza sauce, cooked sausage, reserved chopped onion and canned jalapeno
Night 22: Chicken Fried Rice
-
Freeze leftover Chicken Fried Rice for next month.
Night 23: Enchiladas
-
Using taco meat, fill corn tortillas.
-
Add cheese, sour cream and roll.
Night 24: Philly Cheesesteak Sloppy Joes
Night 25: Chicken Pot Pie
-
Using chicken soup, thicken with flour and add to the pie crust. Top with other pie crust.
Night 26: Bacon Grilled Cheese Sandwiches
Night 27: Reuben Sandwiches
Night 29: Chicken a la King
